Harissa-Roasted Chicken with Pomegranate and Almonds

The first time I made harissa roasted chicken, I burned my thumb pulling the pan out too fast because the smell hit me before the timer even went off — smoky, garlicky, a little sweet from the honey in my harissa. That’s the pull of this dish. It’s a sheet pan dinner, but it doesn’t taste like one of those tired weeknight throw-togethers.

Bone-in, skin-on thighs are non-negotiable here; they crisp up under the broiler while staying juicy underneath the harissa glaze. A final drizzle of pomegranate molasses and a scatter of toasted almonds and ruby seeds turns a simple roast chicken into something you’d want to photograph before anyone touches it, and it’s ready in under an hour with almost no cleanup.

Coating chicken with harissa

Ingredients

  • 8 bone-in, skin-on chicken thighs (about 3 lbs)
  • 3 tbsp harissa paste
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp pomegranate molasses (for the marinade)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 large red onion, cut into wedges
  • 1 lemon, thinly sliced
  • 1/3 cup sliced almonds
  • 1/2 cup pomegranate seeds (arils)
  • 2 tbsp pomegranate molasses (for drizzling)
  • 1/4 cup fresh cilantro or parsley, roughly chopped

Instructions

  1. In a large bowl, whisk together the harissa paste, olive oil, garlic, 1 tablespoon pomegranate molasses, cumin, paprika, salt, and pepper.
  2. Add the chicken thighs and rub the marinade all over, working it under the skin where you can. Cover and let sit at room temperature for 30 minutes, or refrigerate up to overnight for deeper flavor.
  3. Preheat the oven to 425°F (220°C) and line a large sheet pan with foil or parchment for easy cleanup.
  4. Arrange the chicken thighs skin side up on the pan, tucking the red onion wedges and lemon slices into the gaps between pieces.
  5. Roast for 35 to 40 minutes, until the skin is deeply browned and an instant-read thermometer inserted into the thickest thigh reads 165°F.
  6. While the chicken roasts, toast the sliced almonds in a dry skillet over medium heat for 2 to 3 minutes, shaking the pan often, until golden and fragrant. Remove them from the heat immediately so they don’t scorch.
  7. Let the chicken rest on the pan for 5 minutes, then drizzle the remaining 2 tablespoons of pomegranate molasses over everything.
  8. Scatter the toasted almonds, pomegranate seeds, and chopped cilantro over the top and serve straight from the pan.

Tips

  • No harissa paste on hand? Use 2 tablespoons harissa powder mixed with a splash of olive oil and a squeeze of lemon to loosen it into a paste.
  • Marinate overnight if you can — the salt and spices really work into the meat and the skin crisps up even better after a night in the fridge.
  • Check doneness with a thermometer rather than timing alone; ovens vary and thigh meat is forgiving but you still want that 165°F mark for juicy, safe results.
  • Swap almonds for pistachios or pine nuts if that’s what you have, and swap pomegranate seeds for a handful of dried cranberries when pomegranates are out of season.
  • Leftovers keep well in an airtight container for up to 3 days; reheat in a hot oven rather than the microwave so the skin doesn’t turn soft.
