The first time I made crispy fried smelt, I was shocked at how little convincing it took to eat the whole fish — bones, tail, and all. What makes this dinner feel special instead of just fried food is the salad you toss them with right at the end: parsley, thin red onion, capers, and enough lemon juice to make your mouth water. The acid cuts through the richness of the fry, the smelt stay hot and shattering-crisp under the greens, and the whole plate comes together in under thirty minutes — good enough for company, easy enough for a Tuesday.

- 1 lb (450g) whole smelt, cleaned and patted very dry
- 1/2 cup all-purpose flour
- 1/4 cup fine cornmeal
- 1 tsp fine sea salt, plus more for seasoning
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper (optional)
- 1 1/2 cups neutral oil, such as peanut or vegetable, for frying
- 2 lemons (1 zested and juiced, 1 cut into thin wedges)
- 1 cup fresh flat-leaf parsley leaves, roughly chopped
- 1/4 small red onion, very thinly sliced
- 2 tbsp capers, drained
- 3 tbsp extra-virgin olive oil
- Flaky sea salt, for finishing
Instructions
- Lay the smelt out on paper towels and pat them thoroughly dry on both sides — any surface moisture will make the oil spit and keep the coating from crisping properly.
- In a wide shallow bowl, whisk together the flour, cornmeal, 1 tsp salt, black pepper, and cayenne if using.
- Pour the oil into a heavy skillet or Dutch oven so it’s about 3/4 inch deep, and heat over medium-high until it reaches 350-375°F (a pinch of the flour mixture should sizzle immediately on contact).
- Working in batches so you don’t crowd the pan, dredge the smelt in the flour mixture, shaking off the excess, and lower them gently into the hot oil.
- Fry for 2 to 3 minutes per side, until deep golden and audibly crackly, then lift onto a paper-towel-lined plate and sprinkle with a little salt while hot.
- While the fish fries, toss the parsley, red onion, and capers in a large bowl with the lemon zest, lemon juice, and olive oil; season with a pinch of salt.
- Add the still-warm fried smelt straight into the bowl with the salad and toss quickly and gently, just to coat — you want the greens barely wilted and the fish still crisp.
- Pile onto a platter, tuck the lemon wedges around the edge, and serve immediately while everything is at its crunchiest.
Tips
- No smelt at the fish counter? Whitebait, small sardines, or even anchovy-sized fish work with the same method and timing.
- Check your oil temperature with a thermometer if you have one — too cool and the coating goes soft and greasy instead of shattering-crisp.
- Toss the fish with the salad at the very last second before serving; smelt lose their crunch fast once they sit in the acidic dressing.
- You can make the salad base (minus the fish) up to an hour ahead and keep it at room temperature, then just add the lemon juice and toss with the hot fish right before eating.
- Leftovers won’t stay crisp, but if you have them, reheat the fish in a hot dry skillet for a minute or two rather than the microwave to bring back some crunch.
